Random Recipe: Squash Casserole

I have been trying to find some different and healthy side dishes to fix for dinner. Very often, I feel like we eat the following: grilled pork chops or grilled chicken, some type of steamed vegetable, and a pasta side dish (Noodle Roni, Knorr Rice Sides..the BOGO items at Publix). This is a summertime favorite at our house, though. Jackson likes it, too. I found the recipe in a Paula Dean cookbook, hence the butter. It is probably not exactly a healthy side dish, but it probably isn't too bad either.

1 large onion, chopped
4 tablespooons of butter
3 cups of cooked squash, drained (make sure all of the water is out)
1 cup of crushed Ritz crackers
1 cup of grated Cheddar Cheese
salt and pepper to taste

1. Preheat oven to 350 degrees.
2. Saute onion in butter for 5 minutes.
3. Remove from pan and mix all of the ingredients together (except cracker crumbs).
4. Pour into buttered casserole dish (I use PAM).
5. Top with cracker crumbs.
6. Bake for 25-30 minutes.

Sounds yummy. Will have to try it soon. My mom makes a squash casserole, maybe the same one, and it is so good. Thanks for the new recipe! Oh, and the pic of Jackson in your header is too cute!

Thanks for sharing. I love good recipes that real people recommend. And super cute pic of Jackson. At the beach last week I assume. It was fun running into you yesterday. I am planning a garage sale Friday and Sat. So it might be a busy week trying to get it all done. I'll call you when I have a second.
