I saw a few Facebook posts and blog posts about making these. We will probably make them Friday, but thought I would share , in case anybody else wanted to use this to talk with their babies about Easter.

106: A Few Firsts

Claire had her first solid food today. Sweet Potatoes. After talking with her pediatrician yesterday about a little issue she has, he suggested trying vegetables and fruits first before feeding her cereal. So, after dinner I (along with Jackson) fed Claire her first solid food. She ate every bite.

I am going to make her some homemade ones tomorrow. I bought an organic sweet potato and trays to give it a try. I love a good excuse to use my food processor!

She also got her first tooth today (6 months, 1 day). One of the bottom ones...the other one will be popping through any day.

Recipe Request

Chicken Tortilla Soup

4 chicken breasts

2 cans of shoepeg corn

2 cans red kidney beans

2 cans black beans

1 can Ro-tel

1 large can of diced tomatoes

1 package of dry ranch dressing mix

1 package of dry taco seasoning

1 cup of chicken broth

*shredded Monterey Jack Cheese, Tortilla Chips, and Sour Cream to garnish.

1. Put the chicken breasts in the bottom of the Crock Pot.

2. Put everything else on top of the chicken. Do not drain anything.

3. Cook all day on low, or 4-6 hours on high.

4. Remove chicken and shred with two forks, return to pot...stir. That is all. :)

5. Garnish with cheese, sour cream, and chips. I think I got this recipe a couple of years ago off of a random blog I came across. It is easy, and makes a ton. I will sometimes half what I cook, and freeze it, because we are tired of eating it before it is all gone.

105: Thankful Thursday

1. I am thankful that I did not have a car accident this morning when the charming person in front of me decided not to use their turn signal when they were making an abrupt turn.

2. I am thankful for Jackson and Claire's pediatrician. He genuinely cares about my children, and takes time to address any of my questions or concerns...at every single visit. He is so knowledgeable and practical, and addresses my children by name. He makes them feel like seeing them is the best part of his day, even though he sees tons of patients every day. That really is a big deal.

3. I am thankful that Claire got a perfect report of health today at her six month check up. Except for the double ear infection she has. I had no idea. She is still the happiest, most pleasant baby to take care of...after two vaccines, and all.

4. I am thankful that the skin on my hand is still intact. I was getting Easy Mac out of the microwave for Ben and Jackson to eat for lunch today...it was not done and, boiling water splashed all over my hand. Ouch. I think I am going to be okay.

5. I am thankful that my little family went out to eat dinner tonight. I am thankful that a few years ago we decided to make going out to eat a treat, for budgetary reasons. And now, it really is a special time. And, I get the night off. No cooking. No clean up.

103: Cake Cookie Recipe

A couple of people have asked for this recipe. Tiffany gave me this recipe last year at the beach...so easy and delicious.

Cake Cookies (or Cake Batter Cookies)

1 box of cake mix (pick your favorite)

1/2 cup oil

2 eggs

Optional: 1 cup of candy pieces or 1/2 cup of chopped nuts

1. Mix ingredients.

2.Place tablespoon full drops on a cookie sheet.

3. Bake at 350 for 8-10 minutes. They set up as the cool.

I also sometimes roll the dough into smaller balls...bake, and then put a dollop of icing on the top...they look a little fancy, like Thumbprint cookies.

102: Raising Him Right

Jackson: Good morning, Mommy. Did you have sweet dreams?

Me: Yes, buddy. Did you have sweet dreams?

Jackson: Yeah.

Jackson: Well, he was sleeping beside me. Then, it was time to get up. He got in his car, and drove on to Starbucks. He wanted some coffee.
